Red Wine

Red wine from a Sicilian variety of excellence: Nero D’Avola. The Sirah, a grape used by the French, seems to be of Persian origin.
Production area: the district Chinesi, Alessandria della Rocca AG
Altitude: 400 mt
Soil: calcareous soil, alkaline and rich in calcium
Harvest: second week of September
Varietal: Nero D’Avola and Sirah
Fermentation: in steel at a temperature of about 28 degrees.
Refinement: in steel tanks for 5 months, then 10 months in used barriques, then other 3 months of aging in bottle.
Alcohol: 14 %
Serving Temperature: 18 degrees
Tasting Notes: An intriguing wine from the authentic colors and vibrant shades. The Sicilian features are recognised by the slow flow and a strong impact with the nose. Detailed and defined, raspberries and strawberries taste, with a sweet and spicy pepper one, which close the fragrance.
You can perceive the wine firmly, dry and warm, but with a significant freshness and fine tannins, which gives a cleaned and kind taste.
Food Pairings: Monti Sikani pecorino cheese, roast lamb with potatoes, meat and grilled sausage, pasta alla Norma with fried eggplant.

White wine, fresh and aromatic: made from pure Grillo grapes, old vine variety, probably brought to Sicily by the Phoenicians.
Production area: the Chinesi district, Alessandria della Rocca AG
Altitude: 400 mt
Soil: calcareous soil, alkaline and rich in calcium
Varietal: Grillo 100%.
Fermentation: in steel at a temperature of about 15 degrees.
Refinement: in steel tanks for 5 months followed by 3 months in the bottle.
Alcohol: 13%
Serving temperature: 8/10 degrees
Tasting notes: The wine comes in all its brightness with a green and crunchy side. The light is reflected in a bright and shining. You can find all the Grillo features, with its fragrant fruits taste including peach, apricot, mango and prickly pear. A fresh news for the Sicilian landscape, will be part of the summer in all its glory.
Food Pairings: Fish appetizers/entrees, Seafood, eggplant rolls,
Pasta with sardines and squid, Sicilian swordfish.
Fresh and slightly seasoned cheese.

Production area: the Chinesi district , Alessandria della Rocca AG

Harvest: Merlot, first week of September; Cabernet Sauvignon, the second week of September.
Varietal: Merlot and Cabernet Sauvignon.
Fermentation: in steel at a temperature of about 28 degrees.
Refinement: in steel tanks for 12 months, then 3 months in bottle.
Alcohol: 14%
Serving temperature: 18 degrees
Tasting Notes:  a wine with purple colour and purple highlights, with an intense and strong notes of plum and ripe cherry, but thanks to the tannins, the wine has great smoothness.
Food Pairings: Monti Sikani pecorino cheese, roast lamb with potatoes, meat and grilled sausage, pasta alla Norma with fried eggplant.
